Balkan Vegan Salsa (Lutenitsa)

I know the end of summer may be a bit depressing – the temperatures are dropping and the chances of going to the beach are getting slimmer with every single day.

But what I love about this time of the year is the robust harvest of fresh fruits and veggies! Now is the perfect chance to start prepping for the winter and making all sorts of yummy preserves with fewer artificial substances – dyes, harmful chemicals, preservatives, etc.

And so, I decided to share one exquisite recipe for vegan salsa which is very popular on the Balkans – the Mighty Lutenitsa! It is super easy to make and it is extremely versatile – you can use it as a sauce, side dish or as a simple spread on your toast (add a little feta cheese on top and you will be in love with it FOREVER! I promise!)

Trust me – you will never taste anything like it anywhere else!

But that doesn’t mean you can’t make it on your own and now it’s the moment to do so!

There are several variations for this recipe but I will show you one of my favorites which includes eggplants. But if you do not like this veggie, just skip it! No worries!

You can even make small batches of each variation and choose the best one that suits your personal taste (or your family’s preferences).

Instructions
  1. First, let’s prepare the eggplant, if you choose to use it! Slice it in several pieces and sprinkle some salt on top. Place the veggie in a colander for at least 30 minutes to extract the bitter juice.
  2. Then, wash the slices with water and dry with a clean kitchen towel or a tissue.
  3. Next, you can wash the peppers and remove their handles and seeds. Peel the carrots and cut them in slices (longwise or crosswise).
  4. In the meantime, heat the oven at 200° Celsius/ ~390° Fahrenheit.
  5. Place all the veggies (peppers, carrots and eggplant slices) in a baking pan (or 2) and roast them for 30-40 minutes. Remember to turn the peppers so that they are cooked on both sides.
  6. Next, take the vegetables out and leave them to cool down. Remove the skins of the peppers and place the yummy red flesh in a kitchen chopper (or a robot). Add the roasted carrots, the eggplant, and the tomato puree as well. Blend them nicely to form a paste.
  7. After that, heat the olive oil to the boiling point and add it to the mixture along with the vinegar, the sugar, and the spices. Blend the ingredients again and the sauce is ready! If you plan to consume this goodness (I bet it will vanish very quickly!) in the next few days, simply store it in a glass jar with a tight lid in the fridge.
Recipe Notes

*You can make the low carb version of this wonderful recipe just by skipping the brown sugar - the peppers and the tomatoes contain enough natural sugars to make this vegan salsa tasty even without any additional sweeteners!

*If you wish to make more of this yummy spread for the months to come, sterilize the jars, fill them to the top, seal them tightly, and boil them in a large pot with water for 5 minutes. Next, place them in a pan upside down until they cool down – this will create vacuum and preserve the ljuitenitsa for a long time!
