No-Bake Fig Muffins (Vegan, Gluten-free)

 

Since its summer, I know a lot of us steer clear of the stove. I know I do! The heat in our apartment it’s too much and I really do not like using the air conditioner.

And besides, this is the perfect season to have light unprocessed foods packed with all of their vitamins, micro-elements, and minerals! There is nothing better than some freshly picked garden veggies and some homemade healing cranberry juice (you can find the recipe in my FREE healthy cooking and detoxing cookbooks right HERE). 🙂

But let’s back up a little! My point was to share with you something light, vegan and refreshing for the summer without having to switch on the stove – my favorite chilled treats – the no-bake fig muffins! Yay!

I am sure making these babies will be an absolute fun activity for the whole family, and enjoying them afterwards – a real joy! Or maybe you can prepare them on the go when you are out of ideas how to enchant your guests.

Instructions
  1. First, grate the lemon zest.
  2. Next, grind the almonds in a kitchen chopper.
  3. Add the figs and blend until fully homogeneous.
  4. Then, add the lemon zest and the vanilla extract and stir one last time.
  5. Divide the mixture into muffin cups and make a hole at the center of each dessert.
  6. Fill the crater with 1-2 tablespoons of jam and refrigerate for a few hours. Easy as that!
Recipe Notes

*You can use my simple low carb raspberry jelly recipe to substitute the fruit jam! All you need to do is swap the gelatin with agar-agar to make it 100% vegan (if you wish). 😉
