Mix the chicory extract with the milk in a large glass.
Stir the mixture with a frappe machine* (see notes). If you do not have one, do not worry – use a blender instead!
When the chicory is completely dissolved and blended, add the water and continue to stir. At this point you can add the coconut sugar if you desire, especially if you are using nut milk – it will need some sweetness, which vegan milks naturally do not have.
When you get some nice foam at the top of the glass, the diet frappe is ready! Add the ice cubes, stir with a spoon and cover with the coconut cream (if desired).
