Balkan Vegan Salsa (Lutenitsa)
I know the end of summer may be a bit depressing – the temperatures are dropping and the chances of going to the beach are getting slimmer with every single day.
But what I love about this time of the year is the robust harvest of fresh fruits and veggies! Now is the perfect chance to start prepping for the winter and making all sorts of yummy preserves with fewer artificial substances – dyes, harmful chemicals, preservatives, etc.
And so, I decided to share one exquisite recipe for vegan salsa which is very popular on the Balkans – the Mighty Lutenitsa! It is super easy to make and it is extremely versatile – you can use it as a sauce, side dish or as a simple spread on your toast (add a little feta cheese on top and you will be in love with it FOREVER! I promise!)
Trust me – you will never taste anything like it anywhere else!
But that doesn’t mean you can’t make it on your own and now it’s the moment to do so!
There are several variations for this recipe but I will show you one of my favorites which includes eggplants. But if you do not like this veggie, just skip it! No worries!
You can even make small batches of each variation and choose the best one that suits your personal taste (or your family’s preferences).
