  1. First, we need to prepare the veggies.
  2. Steam them until they soften and blend them in a kitchen chopper or a robot.
  3. Next, mix both types of flour in a bowl along with the baking powder.
  4. In another container, beat the eggs and blend them with the vegetable puree, the salt, and the olive oil.
  5. Combine both mixtures and stir with a hand mixture (or a blender) to homogenize the mixture.
  6. Heat the oven to 160° C/ 320° F and bake the muffins in your favorite baking tray until fully cooked and golden.
