Finally, the summer is almost over and it is time to think about some healthy back to school snack recipes – not just for the kids, but also for the whole family as well.

And I present to you my favorite gluten free chickpea muffins with yogurt! These yummy wheat free treats very easy to make, super tasty, and guess what – I have added a secret ingredient that makes them extremely healthy and it is the perfect way to sneak greens into your kid’s food! It’s genius! 😀 But more about this – a bit later!

Now let’s see what we need to make these gluten free chickpea muffins.

First off, as the name implies, the base for these toddler friendly treats is chickpeas. But instead of adding the whole legumes which can be time consuming and annoying, we will be using chickpea flour, which is much easier to work with!

Secondly, you will need some rice powder which is also very popular celiac friendly flour.

Also, for these delicious chickpea flour savoury muffins, I have added one of my most favorite ingredients – yogurt. And of course, since I am from the land of the famous Lactobacillus Bulgaricus yogurt culture, I have used traditional Bulgarian yogurt which is jam-packed with healthy nutrients! Now back to our beloved back to school gluten free chickpea muffins!

Besides the usual olive oil (I do not use refined vegetable oils anymore because of the risks of causing chronic inflammation in the body), I promised I would share with you the secret ingredient I put in these gorgeous chickpea muffin recipe that would make your family have crazy their leafy greens cravings!

My magical chlorophyll source that supplies our bodies with Iron, and a plethora of other essential nutrients – Stinging Nettle powder! This amazing herb is so good for our overall health and wellbeing, but let’s face it – it is definitely not among the most craveable foods on Earth, especially among children (is creaveable a word? 😀 )!

The benefits of stinging nettle powder are simply amazing! This powerful herb has acute antipyretic, diuretic, and anti-anemic effects (this is one of the best non heme Iron sources). I love how easy it is to include some stinging nettle powder to our meals as a wonderful way to sneak greens into the food – it can be added to smoothies, soups, as a spice to any kinds of meals, and of course – it can be used as a gluten free baking flour substitute!  And the best part is that it is not only vegan, but a low carb cooking ingredient as well with merely 0.25 grams of net carbs per 100 grams nettle leaf powder!

Instructions
  1. Mix the dry ingredients in a bowl along with the baking powder.
  2. In another container, beat the egg and blend it with the yogurt and the olive oil.
  3. Start slowly combining both mixtures while stirring with a fork.
  4. Next, add some water, if the batter is too dry (in my case, I added about half a cup) and homogenize the mixture with a hand blender.
  5. Heat the oven to 160° C/ 320° F and and bake the muffins in your favorite muffin tin until fully cooked and golden. Take into consideration your own oven. I personally baked them for 20 minutes on top and bottom heat and 20 more minutes only on top heat.
