Is pudding keto friendly?
The most common pudding recipes are definitely not suitable for people who try to stay away from refined carbs and gluten. The store-bought pudding mixes are packed with starches, wheat, and the traditional recipe calls for lots of white sugar and milk.
So, if you wish to indulge your taste buds with something low carb and diet-friendly, try my low carb strawberry pudding below! I bet you and your family will love it!
How to make homemade keto pudding?
The process of preparing our keto sugar free pudding recipe is very easy with just a few ingredients and lots of variations depending on your personal preferences and nutritional regimens.
You can make this keto pudding with heavy whipping cream, but I decided to go with the healthier option and used sour cream instead.
The other main ingredient is Sodium-free cottage cheese, but I know that finding this product in the supermarket can be a challenge, so you can make your own salt-free milk curdle or you can also prepare this keto pudding with coconut milk, almond milk or cream cheese.
As I mentioned previously, the variations are endless!
The final two important compounds are strawberries (fresh or frozen), and gelatin. If you do not have strawberries at this moment, feel free to use whatever low carb berries are in season – blueberries, mulberries, raspberries, etc.
If you feel this keto cheesecake pudding recipe is not yummy enough, you can add a little bit of keto-friendly sweeteners such as stevia, erythritol, xylitol, monk fruit, etc. I personally like this dessert without any additional sweetness other than the fruits. 🙂
How to turn this into a keto vegan pudding recipe?
If you wish to make this diabetic strawberry pudding vegan, just explore the following ideas:
- Substitute the sour cream with coconut cream;
- Add coconut milk or other low carb dairy free options – almond milk, hemp milk, sunflower seed milk, etc.
- Substitute gelatin with agar-agar or make a keto pudding with chia seeds.
