Low Carb Pumpkin Cake
I know, I know – it is not exactly pumpkin season, but do not worry – nowadays pumpkins and squashes are available almost throughout the whole year.

Now, developing a low carb cake is not an easy task, right? Well, after removing almost all the carbs, there are limited ingredients we can work with.

Fortunately, pumpkin is one of those versatile healthy fruits that can work wonderfully in both sweet and savory dishes which are totally keto-friendly.
For our low carb recipe today we will be using the help of erythritol, although I believe the recipe can perfectly go without it, if you combine this yummy low carb pumpkin cake with lots of keto-friendly fruits, such as raspberries, blueberries, strawberries, etc.
Thankfully, the spring season and early summer are packed with these healthy and nutritious berries!
Also, I have added plenty of fiber from the indispensable coconut. We can’t have a keto diet without coconuts, am I right? 😉

Another key component is the sour cream. I always try to include this ingredient in my keto recipes because it a wonderful LCHF-compatible food with lots of healthy fats and beneficial probiotics which improve our immunity and promote healthy weight-loss. Alright! Are you ready for a super easy low carb pumpkin cake with merely 3 grams of net carbs per one 100-gram serving?

Let’s do this!

Prep Time | 50 minutes |
Cook Time | 30 minutes |

- 1/2 cup pumpkin (cooked)
- 2 Eggs
- 2 Tbsps. sour cream
- 1/2 tsp. Baking powder
- 1 Tbsp. (heaped) Coconut butter soft
- 1 tsp. vanilla extract
- 3 Tbsps. desiccated coconut
- 3 Tbsps. erythrithol
Ingredients

- Simply blend all ingredients well until you reach a homogeneous mass.
- Grease your baking mold with some more coconut butter and pour the batter in.
- Cook at at 180° C /356° for about 20-30 minutes until ready.
- Finally, garnish the cake with your favorite low carb berries - in this case - a cup of raspberries.
- Note: I personally prefer this cake served chilled. Enjoy!
