Noah’s Pudding – No-Cook Vegan Variation (+Gluten-Free)
If you have never heard of Noah’s pudding, no worries – it is not a typical dish for the western cuisine. The ashure, as we call it here in the Balkans, is a Turkish dessert that kind of resembles the porridge. It usually contains whole wheat grains, nuts, and milk. Well, at least that’s how we make it here in Bulgaria.
But since I am avoiding grains I wanted to make something light, vegan and gluten free that will suit my diet plan. Learn more about the gluten-free lifestyle:
To be honest, my end product has almost nothing to do with Noah’s pudding, but it kind of reminds of it. Maybe it’s the almonds, the dried figs or the lemon zest, I don’t know. So, finally, I decided to call it that – a vegan and gluten-free no-cook variation of Noah’s pudding, a.k.a. ashure.
If you wish to make something on a lazy weekend without switching on the stove, that’s the recipe for you! This is also a wonderful dessert idea for the hot summer days when a lot of us just don’t feel like cooking. I know I do! The heat in our apartment gets too much and I really do not like using the air conditioner.
And besides, the warm weather is perfect time to have light unprocessed foods packed with all of their vitamins, micro-elements, and minerals!
