Noah’s Pudding – No-Cook Vegan Variation (+Gluten-Free)
If you have never heard of Noah’s pudding, no worries – it is not a typical dish for the western cuisine. The ashure, as we call it here in the Balkans, is a Turkish dessert that kind of resembles the porridge. It usually contains whole wheat grains, nuts, and milk. Well, at least that’s how we make it here in Bulgaria.

But since I am avoiding grains I wanted to make something light, vegan and gluten free that will suit my diet plan. Learn more about the gluten-free lifestyle:

To be honest, my end product has almost nothing to do with Noah’s pudding, but it kind of reminds of it. Maybe it’s the almonds, the dried figs or the lemon zest, I don’t know. So, finally, I decided to call it that – a vegan and gluten-free no-cook variation of Noah’s pudding, a.k.a. ashure.

If you wish to make something on a lazy weekend without switching on the stove, that’s the recipe for you! This is also a wonderful dessert idea for the hot summer days when a lot of us just don’t feel like cooking. I know I do! The heat in our apartment gets too much and I really do not like using the air conditioner.

And besides, the warm weather is perfect time to have light unprocessed foods packed with all of their vitamins, micro-elements, and minerals! There is nothing better than some freshly picked garden veggies and some homemade healing cranberry juice (you can find the recipe in my FREE healthy cooking and detoxing cookbooks right HERE). ?
The preparation of this recipe is so easy that I am this will be an absolute fun activity for the whole family! And enjoying this healthy dessert afterwards is a real treat! Or maybe you want to enchant your guests with something new, delightfully crunchy and ultra-healthy!

Also, feel free to make a batch of this vegan variation of Noah’s pudding and treat yourself with the ultimate post-workout snack! It has everything your body needs – healthy fats, proteins, complex carbs, vitamins, micro-elements, and lots of fiber! Yummmm!
Either way, let’s get to these diet-friendly treats right away!
You will need just a couple of ingredients – raw almonds, dry figs, fresh lemon zest, and a healthy fruit jam of choice. You can use my low carb raspberry jelly, but the recipe won’t be 100% vegan for it contains gelatin. To make the vegan version, simply substitute the gelatin with agar-agar.

- 1 cup Raw almonds
- 1 cup Dry figs
- 1 lemon (organic, bio)
- Fruit jam of choice* (preferably homemade and sugar-free - see notes)
- 1 tsp. vanilla extract
Ingredients

- First, soak the almonds for at least 8 hours or overnight. Then, just before starting the recipe, drain them completely, and rinse with clean water 1-2 times.
- Next, soak the figs in half a cup (about 100 ml) warm water for 15-20 minutes to soften. Save the sweet water for later, if you need to.
- Then, grind the almonds in a kitchen chopper, add the the figs, and blend until fully homogeneous. You can add the fig water, if you wish to make the process easier.
- Next, grate the lemon peel and add it to the mixture along with the vanilla extract, and stir once again.
- Finally, add the fruit jelly, and blend the pudding one last time.
- Divide the mixture into dessert cups (about 5 with 150 ml capacity) and let the desserts set in the fridge for an hour. Voila!
*You can use my simple low carb raspberry jelly recipe to substitute the fruit jam! All you need to do is swap the gelatin with agar-agar to make it 100% vegan (if you wish). 😉
