My first suggestion is this wonderful low carb dessert which loosely resembles a cheesecake, but instead of cream cheese, I have used Bulgarian buffalo yogurt and mascarpone. Yummmm! This low carb dessert is excellent for your Independence Day celebration (for all my readers from the USA) or for anyone following the keto diet and wants to have something sweet for the summer!
You do not want to miss this recipe – my hubby ate almost all of it, and let me tell you – he is a very picky eater!

Low carb yogurt dessert with berries
My next suggestion is very simple but sooooo tasty and healthy! You can prepare this in minutes and enjoy the benefits of this Balkan dairy product and the vitamins and fiber from berries! You can pick whatever low carb fruits you prefer – strawberries, raspberries, mulberries, blueberries, bilberries, etc.
The best part of this low carb light afternoon breakfast recipe is that you do not need any sweeteners or artificial additives! Plus, if you add frozen fruits and blend with the attachment for ice (ice crusher) of your kitchen robot (the ice crusher is included in this blender set), you have the perfect low carb probiotic summer sorbet! Yummmm!

Quick and easy keto spinach snack
Although yogurt is not the star in this recipe, I decided to include it anyway since it deserves all the attention! This is my low carb variation of the famous spinach pie (called “spanakopita” in Greek and “spanachnik” or “spanachena banitsa” in Bulgarian).
This recipe has it all – leafy greens, healthy fats, proteins, and fiber – everything your body needs for a healthy breakfast or a quick afternoon snack! This healthy green recipe will satisfy the hunger and keep you going for hours instead of making you crash and burn like with all the sugary stuff!

Panna cotta with yogurt and honey
This is a favorite Bulgarian yoghurt recipe for me and my capricious husband! If you have been following my blog for a while, you may have noticed that I love jiggly recipes with gelatin or agar-agar!
On one side, high quality gelatin is beneficial to our bodies (joints, skin, intestines), and on the other hand – it makes the desserts so much tastier and fun to eat! So, take a look at this yummy panna cotta variation with Bulgarian yogurt instead of the traditional recipe with milk, heavy cream, and lots of sugar. Gluten-free muffins with stinging nettle
Just like with the spanakopita above, Bulgarian yogurt is not the center of attention in this recipe, but oh boy, is it delicious!
If I had to substitute bread with one single healthier gluten-free option, this would be it! This healthy snack is also good for toddlers because it does not contain any hard chunks they have to heavily chew.
Also, this is the perfect way to sneak greens into your kids’ meals since the stinging nettle is in the form of powder – tastes heavenly while giving you all the beneficial substances your body needs (such as Iron). But, just to be on the safe side, you may need to consult with your doctor or pediatrician to check whether stinging nettle powder is suitable to you and your family members, as well as the correct daily dosages. Remember that this is a concentrated powerful substance!
