Chocolate and Coconut Fudgy Homemade Vegan Ice Cream
What is summer without ice-cream? And what about homemade vegan ice-cream? If you are suspicious of the most ice cream products on the market, there is always the option of making your own tasty summer desserts using trusted ingredients!
And previously, in the vegan recipe blog series, I have shared with you one very simple chocolate recipe that will boost your metabolism and help you out with shedding these annoying extra pounds! Remember that you can always skip the chili pepper and make regular chocolate candies for all occasions!
Now, let’s go back to our fudgy homemade vegan ice cream! It will be flavored with one of my most favorite aromas – coconut in the form of the intoxicating creamed coconut. If you are not familiar with this natural ingredient, creamed coconut is simply the ground fleshy part of a mature coconut. It does not contain any added sugar (usually, but always check with your producer), and it is in a solid form. If the weather is hot, you may see the coconut oil at the top of the container and the coconut “meat” settled at the bottom. No worries, just stir nicely and you are ready to use this precious tasty compound!
Also, for this summer ice cream recipe we will be using some yummy and healthy bananas packed with healthy carbs, vitamins, and minerals (such as Potassium – excellent for boosting and strengthening the nervous system!). I usually prefer the brownish overripe bananas since they are very sweet and easy to mash into creams and mousses. But if you want to make this recipe a bit more diet-friendly, choose a couple of semi-yellow and green bananas. They could work as well!
In this line of thought, I have added a little bit of maple syrup because I think it is a wonderful vegan sweetener packed with loads of essential nutrients, and I really like the taste. It reminds me of the sweet healthy syrup we make here in the Balkans made of pine tips and honey. Yummmm!
And another special ingredient for this amazing homemade vegan ice cream I would like to mention is the sesame tahini. I just adore this food! It is so delicious and healthy it is almost unbelievable for such a combo to exist! It is packed with healthy fats, hormone balancing compounds, gastrointestinal soothing components, proteins, fiber, and best of all – it is totally low carb and diet-friendly! That is why one of my most favorite keto recipes is the sesame tahini bread I just can’t stop munching:
Now to the end result! Actually, to be completely fair, although I was aiming at making a delicious vegan ice cream for the hot summer days, I ended up with something much more versatile!
I realized that the fudgy mixture could be used in any type of healthy dessert (vegan or non-vegan) – it is excellent for making energy balls, fat bombs (we have coconut butter as well), a quick mousse, а pancake topping, cake frosting, metabolism-boosting bites (did I mention we have cocoa powder here?), and so on, and so on! That’s what I love about this recipe! And of course, feel free to tweak it as much as you like to indulge your taste buds with your favorite flavors!
