Gluten-free Cherry Cake
Finally! Cherry season is here! Whoop-whoop!
I love these delicious red fruits packed with all kinds of healthy nutrients – vitamins, minerals, fiber, anti-oxidants, and so much more!
And the best part is – they are the perfect ingredient for all sorts of healthy gluten-free desserts! Yesss!

And today I would like to share with you my absolute favorite one – the gluten free cherry cake! It has zero added sugar, no wheat protein, and it is absolutely suitable for those who avoid lactose since you can freely use any kind of vegan milk instead of the regular dairy type.
But do not be fooled, although this recipe does not contain any added sugar, this gluten free cherry cake is absolutely delicious! With the help of the mighty Potassium-rich bananas, some dehydrated fruits of choice (such as raisins) and the mouthwatering cherries, this allergy-free dessert is an excellent kid-friendly party treat. Or just a nice afternoon delight with a cup of tea or a glass of refreshing summer diet-friendly frappe!

- 1 Banana
- 1 Egg
- 1/2 cup Milk vegan or regular cow milk
- 1 cup Cherries
- 1/4 tsp. Baking powder
- 6 Tbsps. Rice flour
- 1/4 cup Dry cherries (or raisins)
- 1 tsp. Cinnamon
- 1/4 cup Melted chocolate preferably sugar-free*

- First, pit the cherries and cut them in halves
- Next, blend them with the banana and the egg. You can use a kitchen chopper, a robot or a blender.
- Add the milk, the baking powder, the dried cherries, and the cinnamon.
- Blend again until homogeneous and finally, you can add the rice flour. If you need to, adjust the quantity to reach the consistency of thick cake batter.
- Heat the oven to 180° C/ 356° F and bake until fully cooked (about 25-30 minutes).
- Decorate with some melted chocolate, if you desire.

I need to try baking with rice flour, I feel like I always stick to what I know, but I see so many amazing recipes that use different flours. I LOVE cherries and am lucky enough to live in a big cherry growing area in Northern Italy, so i even get to pick cherries off the trees in the orchards near my house! Our cherry season is coming to an end but before it does, I’d love to make this cake. I’ve never baked with rice flour! So, am really interested in trying it!
