Fear not! This keto American flag cake comes to the rescue with merely 8 grams of natural sugars per a 100-gram serving! WOW!
“How can we achieve these numbers?”, you might ask.
Here’s the deal – in today’s red white and blue keto dessert recipe, I will be using several key component which are 100% keto-friendly and super healthy.
The first one is something, I believe, every healthy diet plan should include – cottage cheese. It is packed with so many essential nutrients, proteins, minerals, and vitamins. And the best part is – it contains low amounts of carbs which makes it perfect for this protein low carb cake!
I would like to make a note, though. Most cottage cheese products on the market contain salt and that might not be the best option for a dessert recipe. So, try to find an unsalted version or simply substitute with cream cheese.
If you can’t, you can always make it on your own at home – the process is very simple and easy. And it is even easier with a special cottage cheese making kit, like this one right here. You will find the full instructions in the video below:

Now, another awesome ingredient which makes this keto cake a little tastier is the keto-friendly sweetener erythrithol. Of course, you can use whatever sugar substitute you prefer – stevia, monk fruit extract, xylithol, etc. I have described all of their pro’s and con’s in my book on healthy weight-loss using the low carb diet plan, specially designed for women. Alrighty, what else do we have here?
As usual on the keto diet and the low carb dessert recipes – we will be using coconut flour, coconut butter, and eggs – they will add more healthy fats, proteins, and micro-elements to the mix!
Finally – the top of the iceberg – the decoration of our red white and blue keto cake we have the best keto-approved fruits – raspberries and blueberries and some mascarpone and Bulgarian yogurt. For this yummy LCHF mascarpone cake recipe I have used some buffalo yogurt since it is super creamy and with low water amount. If you do not have such product you can always make Bulgarian yogurt at home with the amazing starting culture by Bacillus Bulgaricus. Alternatively, you can substitute with sour cream or your favorite cream cheese. The exact quantities and detailed instructions are in the recipe card below!
Also, should you have any other low carb berries at your disposal (strawberries, blackberries, red currant, mulberries, etc.), you can absolutely include them!
And you know what – using these precious fruits in our tasty protein keto dessert is a wonderful way to make a diet-friendly LCHF patriotic cake for your 4th July celebration! Cool, huh?!
Oh, and one last thing – I recommend you prepare the base of the cake and cover it with the cream the day before and refrigerate it overnight, then decorate with the fruits just before serving. This way the cake will absorb some of the extra water from the cream, make the dessert softer, and prevent the fruits from sinking down. 🙂

- 2 Eggs
- 1 cup Cottage cheese (100 grams)
- 2 Tbsps. Coconut flour (14 grams)
- 1 Tbsp. Coconut butter soft
- 1 tsp. vanilla extract
- 3 Tbsps. Erythritol
- 1 cup mascarpone (230 grams)
- 1 cup Bulgarian yogurt (200 grams, preferably buffalo or strained)
- 1 tsp. stevia extract
- 9 Blueberries (quantity may vary according to the size of the pan)
- 50 raspberries (quantity may vary according to the size of the pan)

- Start by heating the oven to 170° C/ 325° F with a fan
- Next, blend the eggs, the cottage cheese, the coconut flour, the butter, the sweetener, and the vanilla extract in a bowl with a hand blender or a mixer.
- When the batter becomes fully homogeneous, transfer into a small baking pan. Mine was a small 11"/7" casserole.
- Bake for about 30 minutes until fully cooked, and take it out of the oven and leave it to cool down completely.
- Next, blend the mascarpone, the yogurt, and the stevia extract, and spread it on top of the cake base. I suggest you do this the previous day and leave the cake in the fridge overnight.
- Finally, decorate with the fruits just before serving!
