Sweet Braided Easter Bread (Sweet Keto Mozzarella Bread)
So, today I want to share a recipe which would be useful to anyone who wants to have a healthier Easter party with less sugar. This is also relevant to people suffering from high blood sugar level, diabetes, metabolic syndrome, obesity, and those following any type of weight management nutritional regimen, especially the HFLC diet plan, etc. (Remember to check with your doctor or nutritionist about the best diet plan suitable for your particular health issue!)

But do not worry, this sweet low carb egg bread does not have to be prepared only during spring! The ingredients used are simple, common, and available all year round! So, feel free to make it at any time you wish, and for any occasion!
What is Easter bread called?
Before we get to our low carb Easter bread without yeast recipe, I thought I would share a bit of trivia, in case you were interested in this awesome spring celebration food.
The Easter braided bread is a very popular dish in almost every Christian country with some variations of the recipe.
For example, in my native Bulgaria, we call it kozunak. The Eater bread is called pane di Pasqua in Italian, the Greek version is the tsoureki recipe (or Easter paska bread), and the Russian word is paskhalniy kulich. What does Easter bread taste like?
The typical Easter bread is very soft, fluffy, chewy, and very sweet. It usually requires lots of eggs, flour, sugar, raisins, and lemon zest (we also add some Turkish delight or marzipan).
So, as you can see, it is quite sweet and tasty, but also extremely carb-loaded and packed with sugar.
That is why today we will be making a keto kozunak – tasty diabetic Easter bread for those who cannot enjoy the traditional version. But fear not, our low carb mozzarella bread will be just as sweet and delightful!
How to make Easter bread without sugar?
For today’s recipe, you will need a couple of simple common ingredients you can find in almost every grocery store or Amazon!
Eggs – yes, most Easter bread recipes include eggs. For my low carb sweet bread rolls, you will need merely two. If you do not wish to use eggs, you can utilize some of the most common egg replacements, such as soaked ground flax seeds or chia seeds.
Sour cream – I love sour cream! It is one of my most favorite healthy fats and probiotic sources along with Bulgarian yogurt! If you do not like this option, you can substitute with cream cheese or thick strained yogurt (buffalo yogurt works perfectly!).
Lemon zest – I prefer freshly grated lemon peel, but remember that the fruit has to be organic or home grown! Some store bought citruses may have harmful toxic agents concentrated in their skin. You can also make your Easter bread with orange zest as well.
Sweetener – I chose liquid stevia, but you can use other diabetic approved sweeteners as well according to your taste – erythritol, xylitol, monk fruit, etc. Just remember that large amounts of these fruit alcohols can cause some digestive troubles! So, be careful! And another thing I wanted to share when it comes to cooking with liquid stevia. I found out that the bitter after taste goes away when the dish is fully cooled down. 😉
Psyllium husk – these tiny seeds are my latest obsession! They are a wonderful source of fiber, but also help the ingredients stick together and blend nicely. I highly recommend adding some when baking low carb pastries – sweet or savory!
Spices – the best thing about baking is the intoxicating aroma of spices, such as cinnamon, nutmeg, and vanilla. Add as much (or as little) as you desire – your keto sweet Easter bread (and the kitchen) will smell wonderful!

Can this Easter bread be frozen?
Actually, you can prepare the bread the previous day, freeze it, and bake it the following day to save some time.
I think you can freeze it after baking, but I am not sure how the taste will change.
How to store you keto plaited bread?
I stored mine wrapped in a clean kitchen towel (or a tissue) in a tightly sealed box in the fridge.
Even after several days, the taste hadn’t changed a bit!
How to serve the Easter bread?
You can eat your sweet braided bread as a regular dessert – with a cup of your favorite beverage.
If you are a fan of chocolate, you can prepare a simple topping of melted low carb chocolate and you have the perfect keto fat bomb that will keep your tummy satisfied for hours!
I have to admit, when I first made this recipe, I ate it as a healthy breakfast and a post-workout snack – it was awesome! I felt nourished and energized for the whole day ahead!
